Chicken 65, Arugula and Feta Pizza - International leftovers!

Every now and then, I get a genius idea and this is it!!!!!! I had some left over Chicken 65 which made this pizza POP with flavour, but regular chicken would work as well.

Dough (makes two thin crust pizzas - 1 regular pizza)
1 cup whole wheat flour
¾ cup white flour
3.5 tsps yeast
1/4 cup warm water
1 tsp olive oil

Mix yeast with half cup warm water till frothy and keep aside. Knead Flours with salt, olive oil and frothy yeast mixture. Add enough warm water till dough forms. Place in oiled bowl in a warm place till its double in size.

Tomato sauce (cut in half if making one pizza)
2 tomatoes finely chopped
1/2 onion finely chopped
3 garlic cloves sliced
Olive oil

Heat the oil. Saute the garlic and onion. Add the tomatoes. Cover and cook till soft. Set aside to cool.

Toppings -(cut in half if making one pizza)
1/2 cup chopped Chicken 65
1/2 cup crumbled feta cheese
1 cup baby arugula


Roll put the dough in a thin circle. Spread the tomato paste, followed by arugula, top with chicken and finish with feta. Bake in an 350 degree oven for 20 - 30 mins.
