Hara Mutton

Its been a long long time since I updated my blog and for that I sincerely apologize! Let's get right into it, what the hell is mutton? There's been great debate about the difference between lamb and mutton. Mutton is simply an older sheep. It's not fatty like lamb but does need to be cooked for a long time to achieve tender fall apart meat. IMHO, it's also tastier. Hara means green and this is simply a mutton curry made using a coriander and spinach paste. It's so good it Baaaaaaa-d!



4 pounds mutton
2 tbsps ginger and garlic paste
Lemon juice and salt
Marinate the meat for a few hours

2 bunches of coriander
1 bunch steamed or blanched spinach
3 pods of garlic
1 inch piece of ginger
3 green chillies
Juice of 1 lime
Grind all the above ingredients to a smooth paste.

2 ripe tomatoes finely chopped
2 large red onions sliced
1tsp whole cumin seeds
2 tbsps ginger garlic paste
6-8 whole cashews
1 tsp turmeric powder
1 tsp cumin powder
1tsp chilly powder
1 tsp coriander powder
Salt
Fresh cracked pepper
Oil


In one pan sauté and brown the marinated meat. in a separate pan, heat some oil and fry the onions till golden brown. When almost done, fry the cashew nuts as well. Remove the nuts and keep aside. Add the tomatoes to the onion, ginger and garlc paste, cumin seeds and the dry spices and salt and cook for at least 5 minutes, till the tomatoes have formed a paste. Add the green paste and cook for a minute. Add the mutton, cover and cook for at least and hour, stirring and adding water as required. If you have a pressure cooker, you can cook it for 10 mins in the cooker till the meat is soft. Add freshly cracker pepper.
