Shrimp Pakoras - Indian Chinese




These are my kids(and my) all time favourite thing to order at our local Indian Chinese restaurant. I can't find this recipe anywhere so I'm just trying to recreate this from memories of it's taste.

1 lb raw Tiger or White Shrimp
700 gms Cooked Salad Shrimp
4 spring onions sliced
1 cup coriander chopped
1 cup each gram flour and cornstarch
2 tbsps each dark soya, fish sauce and chilli paste
Pinch of salt
water.
2-3 cups of oil.

Chop the raw shrimp and pulse half of it. Mix the pulsed, chopped and cooked salad shrimp together. In a separate bowl, mix together all the other ingredients adding water at intervals till the lumps are gone and you have a nice thick paste. Add to the shrimp mixture. in hot oil, fry spoonfuls of the mixture till cooked and crispy. Enjoy!

    I tried these pakoras, following the recipe to the T but they didn't turn crispy at all. The flavours were good though. Not sure what went wrong. Any insights?
